It is crawfish time in Houston and no one cooks them better than Jenny’s mom. Every year, she orders 50-75 pounds and fills the grocery cart up with onions, salt, corn, red potatoes, sausage, orange, garlic, bay leaves, thyme, cayenne and some other secret ingredients. Then, she invites all our friends and family over to enjoy! While they are found across the country, crawfish are a big deal around Louisana and Texas. You might also know them as crayfish, crawdads, freshwater lobsters, or mudbugs. The name “crayfish” comes from the Old French word escrevisse.
