We seem to be always on the run thanks to crazy work schedules and traveling. When our schedules permit, we like to cook together. Over the last couple of years, Jenny and I have developed a more demanding palette.
So, here’s a quick glimpse into a few dishes we’ve prepared over the last few weeks. Note: Almost all of the dishes cost less to prepare than going out for dinner!
- Salad with grilled pork chops and shrimp (marinade: salt, pepper, garlic, lemon grass, and soy sauce)
- Steelhead trout with Asian coleslaw, shrimp, mushrooms and rice (marinade: peaches, habanero, and sesame oil)
- Roll-your-own-“roll” party with shrimp, pork, jicama, chicken, sausage, noodles, and so much more
- Miso-marinated Chilean Sea bass with miso soup and salad
- Grilled chicken, shrimp and roasted bell peppers with salad and rice (marinade: olive oil, lemon, oregano)
- Vietnamese spring rolls with chicken, shrimp, lettuce, mint, basil, jalapeños, green onions, and more
- Mini bison burgers with all the fixins’ (sautéed onions, tomatoes, pickles, coleslaw, grilled corn, and several spicy sauces)
- Shrimp and cranberry salad with shallots, cilantro, fresh Parmesan and a sherry-wine
- Cedar-plank grilled salmon with asparagus (marinade: rosemary, shallots, lemon, olive oil)
- Sautéed lobster, stemmed mussels and grilled shrimp lettuce wraps with tortellini
